Green Smoothies!

I’ve been MIA… busy with work and school. Still eating vegan, but only raw when convenient. Hoping to get back to eating more raw foods. Today lunch was Curried Broccoli and Tofu with Roti.

I bought the frozen organic broccoli in bulk from Costco for $6.75 for a 4lb bag.

The Tofu was $1/pkg from the Hong Kong Supermarket. I used 1/4 pkg.

The Roti was $2.79 for 4 from Indian Grocery.

For lunch today I had a veggie wrap with zucchini, cherry tomatoes, lettuce, red onion, and later avocado. I used Ezekiel sprouted wraps (not raw).

Carob Nanner Butter Ice cream
2 medium frozen bananas, cut in forths
1 tsp of  raw almond butter
1 tsp of chunky raw peanut butter 
1/4-1/2 tsp of carob chips
A pinch of vanilla (from the pod) or 2 drops of vanilla extract
Sprinkle of hemp seeds (optional)
Put all ingrediets in a food processor . It will be pretty loud but no worries! Process until the ingrediets have blended well and move around the blades with ease. Feel feel to switch up the ingrediets. I made a raw version, but you can use whatever you have on hand. If you’re low fat raw vegan take out one or all of the ‘butters’, and omit the hemp seeds. That being said, it’s okay to indulge sometimes. Enjoy!

Lesson Learned

This week was more vegan cooked food less fresh fruits and veggies. I would say I ate about 2/3 raw with eating one cooked meal per day. Yesterday I was pressed for time before work so I didnt have time to make lunch. I comforted myself in the knowlege that there is a Vegan restaurant 10 mins from work where I could get some healthy food. Unfortunately, the day was busy and I ended up at a Trader Joe’s. I purchased frozen food that I knew was Vegan and preservative free; Tom yam soup (Vegan style Tom Yum soup with a coconut and yam base with whole wheat spinach dumplings) and Vegan burritos. I was pretty satisfied with my yummy meal when I took a closer look at the nutritional value. My soup had a whopping 1000mg of sodium and my burrito 580mg. The daily standard is to stay less than 2300mg for the average adult. In one sitting I had ate more than half the recommended amount. I spent the rest of the day hydrating and eating salt free. After eating mostly raw, I could really feel the effects of my lunch decision.

Just a word to the wise to remember that not all Vegan foods are created equal. Alot of the pre-packaged foods can be cause as much damage as the standard american diet foods. Just thought I’d share and give some food for thought.

Breakfast this morning was oat groats. I was going to eat them raw, but didnt have time to make almond milk this morning. I wasnt sure how they’d taste without the almond milk. I soaked to groats with flax meal for 2 days due to laziness. I meant to do it overnight. To my surprise, they started to sprout! I cooked them for about 15 mins then ate them at work with a tsp of pure maple syrup and raisins. The groats were about $7/lb. I think I bought 1/4 lb because I’d never tried groats before. So about $2.Theyre tasty and are supposed to be very nutritious. The waters were free.
